Pumpkin is abundant during the fall season. It is an easy to grow fruit vegetable. Pumpkin fruit is one of the widely grown vegetables that is incredibly rich in vital antioxidants, and vitamins such as vitamin-A, vitamin-C and vitamin-E. Do not throw away the seeds after cleaning the insides of the pumpkin that you carve for jack-o-lantern. The Pumpkin seeds are an excellent source of dietary fiber and mono-unsaturated fatty acids, which are good for heart health. I never tried cooking pumpkin but I like squash which is also belong in the same vine crops family called Cucurbitaceae or cucurbits. Pumpkins are winter squash. Zucchini are summer squash. What vegetables do you like to eat? Green leafy and yellow vegetables are good source of vitamins however, despite of the nutrients and good distinct taste not all people like to eat them. I have two kids and a husband who is very picky when it comes to veggies. I can’t make them eat vegetables. My husband just prefer broccoli while my kids eat peas and carrots sometimes.

I make this dish not for them but for myself. This is one of the many Filipino cuisine that is easy to make and very ordinary. I only cook mung bean when I am craving for pinoy food. Mung beans are traditionally used in East Asian and Indian cuisines. They are a healthy and inexpensive addition to any diet. I added some spices and vegetables in it such as spinach, squash, okra, and onions. All you have to do is add the mung bean in a boiling water and boil it until it is tender. In a sauce pan sauteed the spices like garlic and onions. Add the meat (pork or chicken) and then the vegetables. Then, put the coconut milk, bring to boil and lastly, put the spinach. Very simple isn’t it?
