I have two kids and a husband who is very picky when it comes to veggies. I can’t make them eat vegetables. My husband just prefer broccoli while my kids eat peas and carrots sometimes.
I make this dish not for them but for myself. This is one of the many Filipino cuisine that is easy to make and very ordinary. I only cook mung bean when I am craving for pinoy food. Mung beans are traditionally used in East Asian and Indian cuisines. They are a healthy and inexpensive addition to any diet. I added some spices and vegetables in it such as spinach, squash, okra, and onions. All you have to do is add the mung bean in a boiling water and boil it until it is tender. In a sauce pan sauteed the spices like garlic and onions. Add the meat (pork or chicken) and then the vegetables. Then, put the coconut milk, bring to boil and lastly, put the spinach. Very simple isn’t it?
