Memory Lane Monday #6 – New Year 2012 and Strawberry Sensation

Our New Year’s eve was pretty simple. The simplest new year’s eve in fact compared to the celebration I grew up with. Dearest babger cooked the food (pork steak bbq) and I made a strawberry sensation. We had a cake and some fruits on the table and also left over cookies.

On the first day of 2012, we went to the park. Jake and Justine had a blast taking the time of their lives playing. Good thing the weather wasn’t that freezing. Then, we went on a walk in that trail. We switched turns screaming in the woods to hear our echoes and Daddy explaining to Jake about the creek, dried trees and all the question he had. Justine was just busy being Justine. She didn’t want us to old her hand.

Peach Shape Cookie

When my sister and her husband visited here in Pittsburgh last month, they also attended a wedding. Her husband collected all the different kind of cookies serve at the reception and brought it home to us the next day. All these sweets stuff looks tempting and even if you’re on diet, you would never refused to try this out.

These were some of the foods I ate at Studio B Buffet in M resort and casino, Las Vegas. I love their seafoods especially the sushi. We have sea food buffet here but they have limited selection and my husband don’t like most of it.

Blue Berry Mini Muffin

Muffin anyone?

Bought this pack of home baked blue berry mini muffin at Costco at very cheap price. It’s a good alternative snacks for kids and since it’s mini they sure won’t waste it. One strategy to a picky eater toddlers is to change their menu every now and then. They get tired eating the same food all the time even if it’s their favorite food. You have to add other colorful food or appetizer to their menu like fruits, apple sauce or whatever healthy food you could think. The mini-muffin is just one of them that the kids would love to eat.

Good to be back in FTF again. I’m like mushroom actually now I see now I don’t. Thanks to the host anyway for keeping the meme stronger and bigger.

My sister went on a week vacation to Mexico couple of weeks ago. She sent me picture of this scrumptious fish that they had in there. Mind you, the thought you have in your head right now was exactly I thought when I saw this food.

Birthday Foodies

I prepared three types of food on Justine’s birthday. I am not a cook, but I do try to make it right. It’s a shame that I can only prepared simple dish for my daughter’s birthday.

I bought a sweet rice the last time I shop at Filipino store online. So, I decided to cooked and it came out really good. Too bad I was the only one had to finished it up because my people don’t like it.

We invited someone on Justine’s birthday so I told husband to buy a bucket of KFC. Too bad that visitor did not consider as good friend otherwise they would have stopped by at our house. Party advice though, if someone invited you to a party instead of making lies and alibis, it would help on the host or hostess part to at least say it straight that you couldn’t come.

I also prepared lumpia shanghai for my visitor. And the last but not the least pancit for long life. Pancit is a dish that always present in every Filipino celebration.

These are just simple dish but they’re good. We got lots of left overs so when my MIL visited us the next day, she able to taste some of my simple home cooking food.

Barcelona-Style Omelet

If you like eggs, you’d probably like this recipe I found on my email. I subscribe on MyDailyMoment to received their daily recipe. Omelet is today’s MDM recipe. I love everything to do with eggs so though of sharing it in here too. Recipe source: mydailymoment.com

Ingredients

* 1 large fresh plum (Roma) tomato

* 1 tbsp. extra-virgin olive oil

* 1/4 cup red bell pepper, diced

* 1/4 cup green bell pepper, diced

* 2 tbsp. yellow bell pepper, diced

* Salt

* Freshly ground black pepper

* 8 large eggs

* 1/4 cup pitted black olives

* 3 thin slices of prosciutto, thinly sliced

* 6 leaves fresh basil, cut crosswise into fine strips

Methods/steps

1. Preheat oven to 400 degrees.
2. Bring a small saucepan of water to a boil. Fill a small mixing bowl with ice and water. With a small, sharp knife, cut out the core of the tomato and, on its opposite end, score a shallow X in its skin. Place the tomato in a slotted spoon and lower it into the boiling water; leave until its skin begins to wrinkle, about 30 seconds. With the slotted spoon, immediately transfer the tomato to the ice water to cool. Peel the tomato with your fingertips and, if necessary, the knife. Cut it crosswise in half, remove its seeds with a fingertip, and then cut the tomato into small dice. Set aside.
3. Heat a heavy nonstick ovenproof skillet over medium heat. When the pan is hot, add the olive oil. When the oil is hot enough to swirl easily, add the peppers and sauté, stirring occasionally, until they start to caramelize, about 5 minutes and season with salt and pepper. Add the tomatoes and cook for 2 minutes more.
4. Meanwhile, break the eggs into a large bowl. Season with salt and pepper and whisk well. Add the eggs to the pepper-tomato mixture and stir constantly until curds start to form. Cook until the mixture has begun to set but is still fairly moist.
5. Remove the skillet from the heat and scatter the olives and prosciutto over the top. Put the skillet in the oven and cook until the omelet is completely set but still slightly moist, about 5 minutes more. Remove from the oven and sprinkle with the basil. Drizzle the top with extra-virgin olive oil and let the omelet sit for 5 minutes. Cut it into wedges and serve.

No Spain. No gain. This Spanish-style omelet is rich in flavor thanks to plenty of fresh vegetables. The prosciutto really drives the terrific taste home.
