Jelly With The Durian



I saw the latest photos that my sisters back hope uploaded at their FB and got jealous with fruits they are eating. They had Durian and it looks good. Durian has nasty smell that is why some people don’t like eating it. I first tried Durian when I was teaching in the mountain school and oh boy I love it. The smell of it won’t go away but the taste is delightful. Anyhow, when i look at their pictures they seems like having so much fun fiesting to big piece of Durian. The way the gobble it, looks like they don’t mind the smell at all. I grabbed the pictures from FB so i can share them to those who love Durian and miss eating it like i do.

FoodTripFriday- Fruits and Apple Cake

It’s Friday once again and time to share some of the food we have in our humble abode. We bought wholesale of Clementines and Apples at Cosco and got the bananas at Giant Eagle. Since we have plenty of apples I baked an Apple cake last week. I asked thisrecipe from my SIL when we went to Chicago. I did not follow some of the ingredients because I didn’t have it…lol
Apple Cake
4 c. apples, peeled and diced
2 eggs
2 c sugar (use 1/2 brown, 1/2 white)
2 1/2 c. flour (sift, then measure)
2 tsp soda
3/4 tsp salt
2 tsp cinnamon
3/4 c. vegetables oil
1 c. chopped nuts
1 c. raisins
1c. chocolate bits (leave this out)
Procedure:
~ Beat the eggs well and pour over the diced apples.
~ Sift together in a large bowl the sugar, flour, soda, salt and cinnamon.
~ Add the vegetables oil to dry ingredients, mixing well.
~ Stir in the apple and egg mixture. Add nuts, raisins and chocolate bits. Batter will be thick. Mix thoroughly, then pour into well greased “9×13″ pan, bundtpan or tube pan.
~ Bake 1 hour in pre-heated 325 degree oven. No frosting is necessary.
